Review of 'Sunstart' Coconut Cookies

Sunstart -- Coconut Cookies (vegan)

Summary: this was actually a pretty tasty lil cookie considering I tend to opt for soft-baked and super sweet cookies. It was very much like a butter cookie -- slightly crumbly and coconutty--creamy. It was lightly sweet, but satisfying.

Ingredients: flour base (brown rice flakes, millet flakes, soya flour, corn starch, xanthan gum), desiccated coconut, naturally evaporated cane sugar, molasses, monounsaturated safflower oil, rice syrup, sea salt.

So I love that the ingredients here are decent, however the calories are kinda high for a cookie that has only 1g fiber and protein. Mostly because of this reason, I would not buy this cookie again.

The cookie reminded me of a butter cookie. I need to start baking with coconut-derived products (milk, oil, flakes, water) more often because it does really well to add that butteryness without using real butter. The flavour was really nice (I'm a pretty big coconut fan), but because I'm a sweet hound, I could have used a wee bit more sweetness. The texture was great, as there were coconut flakes throughout as well as small sugar crystals. It's a good cookie for coconut lovers, it just doesn't mesh well with my nutritional aspirations ;)
