Review of 'Earth Balance' Coconut Spread

Earth Balance -- Coconut Spread (vegan)

Summary: wow, the coconut was definitely not lost in this spread. You can really taste the coconutty goodness in this spread, but it's not so overpowering that you forget that it's a butter-based spread. After refrigerating, the spread becomes really hard, however it's still very spreadable (very important!) on warm toast. It's great for baking!

Good fats, people! Okay, so good fats + decent calories (for butter!) + low sodium + no cholesterol + no sugars = great baking butter! It's also great on toast and pancakes (with maple syrup mmmm), of course. The flavour is really light and coconutty and is a nice change from the every day plain butter flavour. I liked that it was subtle enough to still resemble butter in taste because I still wanna feel like I'm eating butter on my toast.

I tried baking brownies with it and they came out really great. There was no discernable coconut flavour because it is a subtle flavouring competing with intense chocolate, but the brownies came out really rich and moist. I think cooking veggies with it would be great because the subtle vegetables would allow the coconut flavour to really make a presence!

I would definitely buy this product again, especially because I'm a huge fan of the brand (info below).
