Review of 'Sunstart' Raspberry Cookies

Summary: just like the Coconut flavour (reviewed here), these have a shortbread texture and flavour. It's very buttery taste, likely thanks to the coconut, which was a very present flavour. The raspberry-coconut combination definitely worked. There were bits of raspberry flavoured pieces that gave the cookie a chewy texture--loved it!

Ingredients: flour base (brown rice flakes, millet flakes, soya flour, corn starch, xanthan gum), desiccated coconut, naturally evaporated cane sugar, raspberry flavored pieces (raspberry pulp, sucrose, apple, pineapple fibers), molasses, monounsaturated safflower oil, rice syrup, sea salt.

The ingredients here don't give me cause to worry, however the carbs, saturated fat and calories really start to add up when you have a what I call a 'normal serving.' This means more than ONE cookie. I had 5...that adds up to 435 calories, 45g carbs, and 15g saturated fat. That's kinda crazy! Mostly because of this reason, I would not buy this cookie again. But let me make clear that I really enjoyed these! If you have self-control and can actually stick to one cookie, you'll be just fine :)

Just like the Coconut flavour, these cookies were so nice and buttery because they also had a coconut ingredient. Baking (and just general cooking) can benefit so much from coconut products. It adds creaminess and butteryness whilst imparting amazing flavour and wholesomeness.  The raspberry flavour was light and really nice and these worked really well with soy milk (any milk with any cookie is pretty undefeatable). The texture was awesome because of the chewy pieces of raspberry--this was my favourite part
