Summary: This is a hit--very tasty and fresh and nutritious and filling as well! The flour tortilla was slightly flaky and moist and tender. The beans and rice were perfectly cooked. The only thing I would have liked was a bit more variety in the filling and a hint of spiciness.

Great ingredients! It is a tad higher than I'm used to in sodium, but it's offset by the great taste, low fat, and high protein and fiber content.

I really liked that the tortilla was not soggy or too dry. After about 55 mins in the toasted oven (on 350 degrees), it was perfectly flaky and chewy--very nice. The filling was composed of pinto beans, rice, and vegetables. However, I kinda only tasted the beans and rice and everything was tender. I would have liked a bit more contrast in the texture...something crunchy would have been nice. Adding a few more prominent veggies would have been awesome. Flavour-wise, it was great but I would have liked a bit of spiciness to enhance the flavour.

This looks like a small burrito but it was actually filling and I was satisfied afterwards.
